Background of the Study
Market traders in Benue State play a crucial role in the local food supply chain, often serving as the primary source of fresh produce and other food items for their communities. However, the level of food hygiene education among these traders is variable, and many lack the formal training necessary to ensure safe food handling practices. Food hygiene education encompasses critical information regarding the prevention of contamination through proper storage, handling, and preparation techniques (Okoro, 2023; Adeyemi, 2024).
In many local markets in Benue State, traders operate in challenging environments where resources such as clean water, proper storage facilities, and waste disposal systems are limited. These infrastructural challenges, coupled with inadequate food hygiene education, can lead to increased risks of foodborne illnesses among consumers. Studies have shown that improved hygiene education can lead to significant reductions in the incidence of foodborne diseases, as traders who are knowledgeable about food safety are more likely to adopt practices that minimize contamination (Chukwu, 2024).
Despite the existence of various training programs and public health campaigns, there is evidence to suggest that the reach and impact of these initiatives are limited. Many traders rely on traditional methods of food handling that may not align with modern food safety standards. Furthermore, the diversity in literacy levels among market traders can hinder the effective dissemination of food hygiene information. This study aims to assess the current state of food hygiene education among market traders in Benue State, identify gaps in knowledge and practice, and propose strategies to enhance educational outreach. The findings are expected to inform policy makers and public health officials in designing targeted interventions that promote food safety at the grassroots level (Uche, 2025).
Statement of the Problem
In Benue State, inadequate food hygiene education among market traders contributes significantly to the risk of food contamination and subsequent foodborne illnesses. Despite the critical importance of food hygiene, many traders lack formal training and continue to rely on traditional practices that may not meet current safety standards. This gap in knowledge is exacerbated by limited access to modern communication channels and educational resources, particularly among traders with lower literacy levels (Adewale, 2023).
The current public health strategies aimed at improving food hygiene education have not achieved widespread impact. The variability in food handling practices observed in local markets is a direct reflection of this educational gap. Consequently, consumers are often exposed to food that has been handled in unsanitary conditions, leading to outbreaks of foodborne diseases that burden the local healthcare systemand diminish consumer confidence in market produce. Furthermore, the lack of standardized training programs and regulatory oversight means that even when educational programs are available, their implementation is inconsistent and often not tailored to the specific needs of market traders (Ibrahim, 2024).
This study intends to systematically assess the level of food hygiene education among market traders in Benue State, identify key deficiencies, and explore the barriers to effective education. The outcomes of this research will provide evidence-based recommendations for improving food hygiene education and, by extension, reducing the incidence of foodborne illnesses in the region.

This study focuses on market traders in selected urban and semi-urban markets in Benue State. Data will be collected using structured questionnaires and interviews. Limitations include possible response bias and challenges in reaching traders in remote market locations.
